Mountain Province chefs shine in 2024 ‘Mangan Taku’

BAGUIO CITY(PIA)–Two young local chefs from Mountain Province triumphed in the recently concluded 2024 Mangan Taku Food and Wine Cookfest held at the Rose Garden, Burnham Park, Baguio City.

 

Bauko’s Tamtam Café chef Harry Osboken was awarded first place for his “Dawdaw Pihing ya Pinakpak”. This dish, slowly cooked in a clay pot, is a combo of “dawdaw” or smoked meat, “pihing” (taro plant), and “pinakpak” composed of rice, vegetables, and root crops.

 

Osboken said his dish is a Cordilleran flavor revered because of its health benefits.

 

“Our dish is a trinity of three essential food components- Go, Grow and Glow- which are highly valued by the Cordilleran community for their nutritional benefits. Cordilleran cuisine is known for its healthy and nutritious traditional dishes that incorporate starch, protein and glow foods” he shared.

He also won fourth in the Wine Mixology Competition featuring his innovative concoction “Simsim ya Teek.”

Chef Jaypee Lawilao of Silverwood from Sabangan clinched the second spot in the cookfest for his “Sinigtimang Pork Lechon”.

 

His dish, lechon mixed with sayote tops, and “sigtim”(a fermented rice wine) stands as his municipality’s commitment to innovation.

 

Lechon is one of Sabangan’s featured food during the  Gagayam Festival  due to the abundancy of pork. This highlights the rural communities’ ability to thrive in the evolving gastronomy.

The Mangan Taku Cookfest and Cordillera Wine Mixology highlight authentic, traditional and innovative food creations, which represents local and indigenous knowledge  in the Cordilleras.
